We will be posting a low cost recipe, with easy ingredients, filling, nutritious, and cruelty-free! Along with a Low Income Vegan Extraordinaire Tip on low-cost vegan living!
This week’s recipe is inspired by the Puerto Rican Lazy Rice.
2 cups of white rice
3 cups of water
1 red pepper
1 head of broccoli
3 garlic cloves
1/4th of a cup of achiote oil (for color, can be substituted by olive oil for a white color)
2 teaspoons salt
2 teaspoons black pepper
1/4th of a container of firm tofu
Preheat oven to 350.
In a pan put three drops of achiote oil on high. Once hot, crumble the tofu in the pan, stir fry until even color and firm consistency. (If you happen to have turmeric in your pantry, sprinkle a bit on it while on the pan, but it is not necessary)
In an oven pan, place the 2 cups of white rice, the chopped pepper, broccoli, and garlic. Place the stir-fried tofu here too. Mix well.
Place the rest of the ingredients. Mix the oil well with the water so that the color evens out.
Cover with a lid (or aluminum foil). Place in the oven for 50 minutes.
Can be served with a tomato and avocado salad, but it is not necessary.
LOW INCOME VEGAN EXTRAORDINAIRE TIP: Feel free to substitute vegetables for whatever is on sale at your local market. Look for a special Sale section, stores sell vegetables that are too ripe for a bargain price. Don’t be afraid of taking a vegetable that is bruised in some sections. Simply cut those parts off and use the rest!
