Low Income Vegan Extraordinaire: Odds and Ends

Part of being low income in general is finding ways to have enough food to cover all your meals for yourself and your family. Today’s recipe is on the lean side, for when money just isn’t there and you only have the little odds and ends in your fridge. This is what was on my fridge, feel free to add in what is in yours. It’s simple and inexpensive, but healthy and delicious and cruelty free.

Stir Fry Odds and Ends

(Serves 3)

3 medium potatoes

½ onion

3 cloves of garlic

¼ of a red bell pepper

5 large leaves of kale

2 scallions

1 teaspoon of your preferred cooking oil

Pinch of salt

Dash of black pepper


Cut the vegetables.

Heat the oil in a pan in medium heat. Add the potatoes, when they start getting softer, include the other ingredients except the kale. Once everything starts browning, add in the kale for a few seconds until it starts getting a little bit soft. Stir well.


LIVE TIP: Veganism extends beyond a vegan diet, and also includes other instances of animal use, like beauty products. Companies that make toothpaste, more often than not, test their products on the bodies of animals through unnecessary and horrible experiments. It can be expensive to purchase cruelty free toothpaste for example, thankfully there is a way that as a Low Income Vegan Extraordinaire, you can go around that. Make your own! It’s easy and takes less than a minute! I make mine every morning. One teaspoon of coconut oil, two teaspoons of baking soda, and three drops of peppermint oil, mixed well until a paste forms. Brush your teeth as usual. Cheaper, healthier, and cleaner!
