This recipe is fairly easy to make and delicious. It is all plant-based without the expense!
1 15oz can of pigeon peas (can be substituted for lentils too with similar flavor)
1 tsp salt
½ tsp black pepper
the liquid in the can of pigeon peas or other beans (also called aquafaba- and serves as an egg substitute)
3 tbsp of water
2 tbsp of oil
Mix all ingredients together in a blender. Form balls about 1½ inch in diameter. In a medium pan brown the meatballs in a bit of oil.
Serve with spaghetti and tomato sauce for a complete meal!
