Tortilla Pizzas are affordable, delicious, and a hit with kids!
(Serves one person)
2 tortillas (Mission brand tortillas are vegan)
6 tablespoons of tomato sauce
¼ of a red bell pepper
2 thin slices of extra firm tofu
2 cloves of garlic
2 tablespoons of cooking oil
salt and pepper to taste
Heat oil in medium high heat. Add vegetables. Remove when soft. .
Add the tofu to the pan. Cook until brown on both sides. Add salt and pepper to taste.
Heat a pan without oil in high. Add the tortillas. Leave them for 5 seconds and then turn. Place the sauce, veggies and tofu. Enjoy!
(If you can afford Daiya cheese and you are able to get it in your local store, you may add it under the sauce. But it is still a delicious treat without it!)
LIVE TIP: Vegan cleaners can be expensive. For an inexpensive and excellent all purpose cleaner, buy white vinegar and in a container mix equal parts vinegar and tap water and add in lemon and orange peels. (You can freeze them and wait until you have enough). This will leave everything super clean. It is so effective that this was used in Walt Disney World restaurants!
